02Beyond Georgia

Trio Plant-Based in Minneapolis sells out Sunday brunch with Black-owned vegan soul food done the classic way. Portland's Dirty Lettuce and New York's Red Bamboo keep the tradition strong on the coasts. The through-line: comfort food first, plant-based as a given, flavor inherited from grandmothers who knew how to season anything.
